Happy Cinco de Mayo!

Dark Chocolate Chili Cupcakes

Here is how the Gillespies are celebrating Cinco de Mayo. Why not put a little spicy in a sweet confection? I think moist dark chocolate and chili peppers are a match made in heaven! Of course, I had to put a sweet cream cheese frosting on top to cool things down a bit...

Moist Dark Chocolate Cake + Molten Spicy Chocolate Ganache Filling + Cream Cheese Frosting = Heaven.

This little lovely starts with a super-moist dark chocolate cupcake. The batter is actually made the way an old fashioned brownie is! This creates a nice thin 'crust' on the top, and seals all that oh, so delicious moisture in the cake. Next, this guy is filled with a spicy bittersweet chocolate ganache. (Typical ganache, with added chili powder, cinnamon, and cayenne pepper for heat!) A sweet cream cheese frosting makes it seem like a true dessert! Since I had a bit of ganache left over, I decided to drizzle that on top! 


I thought these would be the perfect company for our family enchilada dinner tomorrow. How are you celebrating Cinco de Mayo this year?
