Margarita Cupcakes

A summertime staple!

For this Florida girl, nothing beats a nice summer day outside catching some rays. However, the same sun that provides some much needed soul-lifting, can also wear you down! Enter- a frosty Margarita with its limey-lovey goodness! There is just something about the salty-sour-sweet combination that perfectly compliments those sun-filled days!

 Well, these cupcakes capture the very essence of summer (and that superb cocktail) in each fluffy bite! I was trying to decide on what to bring to a friend Angie's Margarita party a couple of weeks ago; I thought I had settled on a dozen different recipes, but nothing seemed to fit!!! Eventually I decided nothing would do except a cupcake infused with margarita! I was elated to find this recipe from a favorite blog, Brown Eyed Baker! I quickly whipped up a batch to accompany me at the margarita party, and to my delight - they were a HUGE hit! 

The citrusy lightness of this cupcake pairs perfectly with Mexican tequila. As these fluffy little lovelies wrap up in the oven, they are brushed once more with tequila. They are cooled, then topped with a tequila-lime frosting. Did I mention they are made with tequila and lime?! I can't think of a better way to spend a steamy Florida summer then enjoying one of these citrusy treats! What is your favorite summer indulgence?

Happy Cinco de Mayo!

Dark Chocolate Chili Cupcakes

Here is how the Gillespies are celebrating Cinco de Mayo. Why not put a little spicy in a sweet confection? I think moist dark chocolate and chili peppers are a match made in heaven! Of course, I had to put a sweet cream cheese frosting on top to cool things down a bit...

Moist Dark Chocolate Cake + Molten Spicy Chocolate Ganache Filling + Cream Cheese Frosting = Heaven.

This little lovely starts with a super-moist dark chocolate cupcake. The batter is actually made the way an old fashioned brownie is! This creates a nice thin 'crust' on the top, and seals all that oh, so delicious moisture in the cake. Next, this guy is filled with a spicy bittersweet chocolate ganache. (Typical ganache, with added chili powder, cinnamon, and cayenne pepper for heat!) A sweet cream cheese frosting makes it seem like a true dessert! Since I had a bit of ganache left over, I decided to drizzle that on top! 


I thought these would be the perfect company for our family enchilada dinner tomorrow. How are you celebrating Cinco de Mayo this year?

Should I Go-Go Mango???

Mango... It makes my heart melt!

When I sliced into a nice ripe Mango this weekend, I was so delighted with the sweet, juicy goodness! I immediately thought- how have I never had a mango cupcake? This is a serious injustice!


Have any of you had a cupcake that incorporated Mango flavors? Was it paired with other flavors? I'm thinking key lime might be quite scrumptous... Would you try one if you had the chance?

I'd love to hear your feedback :) I'm thinking of going for it! Perhaps a coconut or lime cupcake, filled with a mango curd?

Spring is Here!

Let's Welcome Spring with Luscious Lemon Blueberry Cupcakes! 


Lemon (and all citrus fruits) are my secret weakness... Yes! Even more than chocolate! I mean, could a Florida girl be any other way?

Yummy Fresh Fruit!

Anyone who knows me will tell you I'd choose a fruity, tart treat over a chocolate or sweet treat anyday. When you add blueberries into the mix, I go weak at the knees! This cupcake combines my all time favs. As if that wasn't enough, its topped with a light lemony cream cheese frosting. Oh, my MY!


To begin this cupcake, I wash some fresh blueberries, and zest a wonderfully ripe lemon. The aroma from the zest is much more pleasing that any extract could ever be! The lemon's zest and its juice are baked into this fluffy delight. Also, whole fresh blueberries burst into the batter as this little lovely cooks up!



Usually, when I make a fruity cupcake I like to fill it with a curd. However this cupcake has so much lemony flavor in the batter,  I thought adding a curd might be too much, so this one ditches the filling. (Plus, where would all those bursting blueberries go if the curd was in the way?!) What this fluffy muffin does need is a nice sweet frosting to offset the sour of the lemon... Enter *my favorite* cream cheese frosting! But of course! This frosting also has a teeny bit of lemony goodness as well, provided by the zest & juice of another lemon. Spring is here! Embrace it, and all it's flavors :)

Midnight Red Velvet

Sometimes, you just need a cupcake at midnight!

And lucky for me, when teachers are on Spring Break, we have no concept of time!

When talking to a friend about flavor concepts yesterday, I realized I was lacking a go-to Red Velvet recipe! I mean, really? Can you believe it?! Anyway, after having a great dinner with my parents, I just needed a red velvet cupcake! It would be the perfect way to end a great evening. Problem was... the cupcake fairy didn't make any while I was gone... And it was already 10 PM. But some tasks can not wait, and I needed that cupcake. Pronto.

So to the kitchen it was! I eventually pulled those little lovelies out of the oven at 11:00.



As they cooled, I whipped up the best part - the true reason I eat cupcakes... The FROSTING! I tried out a new cream cheese frosting recipe, and was a bit skeptical. But my brother & I agree it may be the best yet! 


Oh, my MY was it challenging not to sit down with a spoon! Luckily teachers loose their schedule over spring break, not their will power! It was worth waiting for the final product :)


This one is a classic for a reason, peeps.

Dark Chocolate Peanut Butter Cupcakes

I've been yearning for some dark chocolate lately, and my hubby is a huge Peanut Butter Cup fan, so these seemed like the perfect Tuesday night treat :) These chocolate lovelies are made almost like a brownie, and come out with a super-moist center, and a slight *dare I say* crust on the top. The peanut butter frosting is "creamy and decadent" as my Partner in Crime describes. :) Overall, enjoying this cupcake is similar to what I imagine it would feel like to jump into a fluffy peanut butter cup pillow!!!

Spring is Here!
